This is the economics of quality most people never see. A rushed shop might let a marginal part slide — the defect is invisible today, but it shows up later as a delamination, a surface flaw, or a structural failure under heat and vibration. In a carbon part that sits on an engine, failure isn't an option.
We'd rather slow down a production line than let a contaminated layer reach a customer. Speed is second. Quality is first.
It would be easy to push more parts through. The workshop is capable of it. But we design our output to stay small for a reason:

That number isn't a limitation — it's a spec. It guarantees that every piece receives full attention through every stage: careful sanding, precise cutting, controlled layup. No worker is juggling so many parts that a flaw slips through.
